Ingredients

  • 1 cup softened butter (salted butter is fine)
  • 1-1/2 cups brown sugar, packed
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all purpose flour
  • 1 tablespoon corn starch
  • 2 teaspoons Fleischmann's Baking Powder
  • 1 teaspoon Fleischamnn's Baking Soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 2-3 cups mix-ins (I made smores cookies and used 1 cup marshmallows, 1 cup graham cracker cereal, 1/2 cup milk chocolate chips).

Instructions

  1. Cream together butter and brown sugar, then mix in the eggs and vanilla. Measure in the flour, corn starch, baking powder, baking soda, salt, and cinnamon. Lightly mix together dry ingredients then start mixing it all into the wet ingredients until well combined. Fold in mix-ins of choice. Scoop cookies onto a parchment lined baking sheet.
  2. If freezing- and freeze on baking sheet and transfer to a freezer bag until ready to bake.
  3. To bake from frozen: take cookies out and place on a parchment lined baking sheet. Let sit at room temperature for 10 minutes. Meanwhile, preheat oven to 350F. Bake for approx.15-20 minutes or until edges are golden. Let cool a few minutes before transferring to a wire rack.
  4. If baking- refrigerate scooped cookies for 10 minutes, meanwhile preheat oven to 350F. Bake for approx. 12-15 minutes until edges are lightly golden. Let cool a few minutes before transferring to a wire rack.
