Baked Mini Pancakes
Ingredients
- 1 cup all-purpose flour
- 3 tablespoons granulated sugar
- 1 ½ teaspoons Fleischmann’s Baking Powder
- ¼ teaspoon Fleischmann’s Baking Soda
- ¼ teaspoon salt
- 1 tablespoons unsalted butter, melted
- 1 tablespoon neutral oil
- 1 large egg, whisked
- 1 cup whole milk
- 1 teaspoon vanilla extract
- Berries, chocolate chips or sprinkles (optional)

Instructions
- Preheat the oven to 350(f) degrees. Lightly grease a 12 cup muffin tin & set aside.
- In a medium size mixing bowl whisk together flour, sugar, baking powder, baking soda & salt until combined.
- Add butter, oil, egg, milk & vanilla. Whisk until batter comes together, but do not overmix.
- Evenly divide the batter amongst the prepared 12 cup muffin tin.
- Sprinkle with desired mix-ins, such as berries, chocolate chips or sprinkles.
- Bake until the top bounces back to touch, about 12 to 15 minutes. Serve immediately.
