Bourbon Bacon Butter Tarts
Ingredients
- 1 double batch pie dough, chilled
- 1/4 cup unsalted butter, melted & cooled
- 1/2 cup light brown sugar, packed
- 1/2 cup Crown Golden Corn Syrup
- 1 large egg, whisked
- 1 tablespoon bourbon
- 1 teaspoons vanilla extract
- 1 pinch salt
- 6 slices of bacon, crispy & chopped

Instructions
- Preheat the oven to 375(f) degrees. Lightly grease a 12 cup muffin tin & set aside.
- Roll out prepared pie dough to ¼-inch thick. Using a large biscuit cutter, cut dough into 12 rounds.
- Pinch in edges & transfer to prepared muffin tin to create the tart shells. Refrigerate as you prepare the filling.
- In a medium mixing bowl whisk together butter, brown sugar, corn syrup, egg, bourbon, vanilla extract & salt until well combined.
- Evenly divide the bacon amongst the prepared tart shells. Evenly divide the filling amongst the prepared tart shells.
- Bake for 20 to 25 minutes, until the filling is bubbly & the crust is golden.
- Let cool slightly before removing from pan & serving.
