Cottage Cheese Cake
Ingredients
- 2 1/2 cups full-fat cottage cheese
- ½ cup full-fat greek yogurt
- ¾ cup granulated sugar
- 1 pinch salt
- 1/3 cup corn starch
- 2 teaspoons vanilla extract
- 5 large eggs
- Freshly sliced strawberries, for topping

Instructions
- Preheat the oven to 350(f) degrees. Line a 9-inch spring form pan or round cake pan with parchment paper.
- Remove the liquid from the top of the cottage cheese before measuring.
- To a food processor add cottage cheese, yogurt, sugar, salt, cornstarch, vanilla extract & eggs. Puree until silky smooth.
- Transfer mixture to prepared pan & cover with foil. Bake for 30 minutes, remove foil & bake for an additional 20 to 30 minutes, until puffed & set. Let cool to room temperature & refrigerate until ready to serve.
- Finish with freshly sliced strawberries, slice & serve!
