Ingredients

  • 2 Eggs
  • 2 ½ Tbsp Crown Lily White Corn Syrup
  • 2 Tbsp granulated sugar
  • 6 ½ Tbsp All purpose Flour
  • 2 ¼ tsp Fleischmann's Baking Powder
  • Water based food colours to suit

Instructions

  1. Beat the eggs, sugar, and food colours with your hand mixer at maximum speed until an airy foam appears
  2. Add the corn syrup and beat for about two minutes. The mixture should increase in volume. If necessary, add more food colouring to achieve the desired final colour
  3. Sift the baking powder and the flour into the bowl with the coloured mixture
  4. Stir the dough gently with a silicone spatula in circular motion to avoid deflating the mixture
  5. Pour the mixture into cups with the help of a silicone spatula or tablespoon. Fill the cups to about a third since the baked mixture rises significantly during baking
  6. Put the cups in the microwave and bake at high for between 1 to 1 1 ½ minutes. Focus on the texture of the dough, not the time, since it depends on the wattage of your microwave and the number of cups in it. The surface of the moss should be dry and spring back a little when pressed down
  7. After baking, remove the cups and leave them out to cool upside down for 10-15 minutes.
  8. When cooled, run a small palette knife around the inside of the cup to loosen the “moss”. Cut apart the sides of each cup with scissors and remove the moss. Now it is ready for use for decorating your cakes by tearing or breaking into the required size/shape
