Gluten Free Oatmeal Flax Bread
Ingredients
- 1 1/2 cups water, warm to touch
- 2 large eggs, room temperature
- 3 tablespoons olive oil
- 3 tablespoons brown sugar, packed
- 2 teaspoons Fleischmann’s Quick Rise Instant Yeast
- 1 teaspoon salt
- 3 cups quality GF bread flour
- 1 cup GF old-fashioned rolled oats
- 1/2 cup flax seed mill
- Egg wash, to finish
- Seeds, to finish

Instructions
- In a large mixing bowl whisk together water, eggs, olive oil, brown sugar, yeast & salt until well combined.
- Add the flour, oats & flax seed mill. Stir until the dough just comes together. Cover & let stand for 15 minutes.
- Turn out onto a lightly floured surface & knead. As the dough begins to hold its shape more, shape into a log & transfer to a greased loaf pan. Cover & let rise for an hour.
- Preheat the oven to 350(f) degrees. Generously brush the loaf with egg wash & sprinkle with seeds.
- Bake until golden & cooked throughout, about 30 to 40 minutes.
- Let cool completely before slicing & serving.
