Jam Filled Cupcakes

¼ Cup Oil
2/3 Cup Sugar
1 Egg
1 tsp vanilla extract
1 ¼ Cup flour
1 tsp baking powder
½ tsp salt
½ Cup milk
¼ Cup sprinkles


Jam, lemon curd or whipped cream, for filling
Buttercream, for frosting
Sprinkles, to finish


Cupcake Directions:

In a stand mixer, add oil, sugar, eggs, and vanilla and beat until light and fluffy. Then slowly add your flour mixture, followed by the milk and sprinkles.

Scoop batter into cupcake liners and preheat the oven to 350F. Bake for 18 minutes & let cool.


Filling Directions:

If using jam (a chunky filling), simply dome out the centre of each cupcake using a paring knife & spoon in the filling. Smooth to flatten. Top with a dollop of buttercream & finish with sprinkles.

If using lemon curd or whipping cream (a smooth filling), transfer the prepared filling to a piping bag fitted with a long, narrow & sharp tip. Poke tip into the centre of the cupcake & fill until there is a slight resistance. Top with a dollop of buttercream & finish with sprinkles.
