Rose Marbled Marshmallows

Baking Success Or Baking Mess


½ cup rose water
½ cup water
¾ ounces gelatin
2 cups granulated sugar
⅔ cup corn syrup
1 pinch of fine salt
Red or pink food colouring
½ cup cornstarch, for dusting
½ cup powdered sugar, for dusting


  1. Line a 9 by a 13-inch baking dish with parchment paper & brush generously with oil. Add rose water into the bowl of a stand mixer fitted with the whisk attachment & sprinkle in the gelatin.

  2. In a saucepan over medium heat add the water, sugar, corn syrup & salt. Stir until sugar dissolves.

  3. Increase heat to medium-high & bring to a boil, do not stir. Continue cooking until the temperature reaches 230 degrees, about 6 to 8 minutes.

  4. Slowly pour the mixture into the bowl of a stand mixer with the mixture running at low speed. Once all the syrup is added, turn the mixture to high & continue whisking until fluffy, about 10 minutes. Finish with rose water extract & beat until combined.

  5. Transfer mixture to the prepared baking dish & swirl with food coloring. Let stand at room temperature until firm, about 2 hours. When ready slice dust generously with the cornstarch & powdered sugar. Slice & enjoy!
