Orange Chocolate Shell-Shaped Madeleines

1/2 cup unsalted butter (1 stick) for the batter + extra for brushing the shell pan
3/4 cup + 2 tbsp all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
2 large eggs at room temperature
1/2 cup granulated sugar
Grated zest of 1 orange
1 cup dark chocolate chips
Sprinkles (optional)


  1. Melt the 1/2 cup unsalted butter either in your microwave or in a small pot over medium heat, and allow to cool to room temperature.

  2. Sift the flour, baking powder and salt into a bowl then whisk together and set aside.

  3. In a stand mixer, beat the eggs, sugar and orange zest on high for about 8 minutes, until the mixture forms a ribbon when the beater is lifted. The mixture will be a light yellow colour with a thick silky texture.

  4. Fold half of the dry mixture gently, until just combined, and repeat with the other half. Fold the butter, keeping in mind to be as delicate as possible, until just combined. Cover and refrigerate between 30 and 60 minutes.

  5. Preheat the oven to 400°F, and brush the shell mold with melted butter.

  6. Fill each cavity 3/4 of the way.

  7. Place in oven for about 11-12 minutes, until the madeleines are browned around the edges.

  8. Allow the madeleines to cool on a wire rack.

  9. In a microwaveable bowl, add the dark chocolate chips. Microwave the mixture in 30-second intervals, stirring in between each. Repeat until the chocolate is completely melted.

  10. To glaze the madeleines, hold them shell side down and press gently into the melted dark chocolate. Transfer the madeleines into a baking pan lined with parchment paper. Add sprinkles if you wish!

  11. Let the pan chill in the fridge for around 5-10 minutes. And enjoy! 🙂
