Pumpkin Soda Bread
Ingredients
- 3 tablespoons unsalted butter, melted
- 3 tablespoons brown sugar
- 1/3 cup pumpkin puree
- 1 large egg
- 1 1/2 cups buttermilk
- 3 1/2 cups all-purpose flour
- 1 teaspoon Fleischmann’s Baking Soda
- 1 teaspoon salt
- 1/2 cup raisins or craisins
- 1/2 cup pepitas
- Egg wash, to finish

Instructions
- Preheat the oven to 375(f) degrees. Line a baking sheet with parchment paper.
- In a large mixing bowl whisk together butter, sugar, pumpkin puree, egg & buttermilk until well combined.
- Sift in the flour, baking soda & salt. Stir until dough comes together. Fold in the raisins & pepitas.
- Transfer to a prepared baking sheet & shape into an 8-inch round loaf. Brush the top with egg wash & finish with flaked salt.
- Bake until golden & cooked throughout, about 20 to 25 minutes. Let cool slightly before slicing & serving!
