  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 egg yolks (reserve the whites)
  • 2 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon Fleischmann’s Baking Powder
  • 1/4 teaspoon salt
  • Cinnamon sugar, for topping
  • Slivered almonds, for topping

  1. In a large mixing bowl cream together the butter & sugar until fluffy, about 2 minutes. Add the egg yolks, vanilla & almond extract. Beat until combined.
  2. Sift in the flour, baking powder & salt. Continue mixing on low speed until dough comes together.
  3. Shape into a disc, wrap in plastic wrap & refrigerate until firm.
  4. Preheat the oven to 375(f) degrees. Line 2 baking sheets with parchment paper.
  5. On a lightly floured surface roll out the dough to ¼ inch thick. Slice into 24 rounds using a biscuit cutter & transfer to the prepared baking sheets.
  6. Brush the tops lightly with the reserved egg whites & sprinkle generously with cinnamon sugar. Gently press in slivered almonds in the pattern of a sand dollar.
  7. Bake for 6 to 8 minutes, until golden & cooked throughout. Let cool completely before removing from the baking sheet.
