1 single pie dough, chilled
4 cups fresh summer berries (blueberries, raspberries, blackberries & strawberries)
½ cup granulated sugar
3 tablespoons cornstarch
1 pinch salt
1 teaspoon vanilla extract
2 tablespoons lemon juice
Egg wash, to finish
Raw sugar, to finish


  1. Preheat the oven to 350(f) degrees. Grease an 8-inch cast iron skillet with butter.

  2. Roll out dough to ¼ inch thick. Cut into flowers using a pastry cutter.

  3. In a large mixing bowl toss together berries, sugar, cornstarch, salt, vanilla & lemon juice until well combined.

  4. Transfer berry mixture to prepared skillet & top with pastry flowers, ensuring each one overlaps. Brush with egg wash & finish with raw sugar.

  5. Bake for 40 to 45 minutes, until the fruit begins to bubble.
