Ingredients

  • 1/2 cup unsalted butter
  • 3 medium ripe bananas
  • 3 tablespoons Greek yogurt
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 1/2 tsp. Fleischmann’s Baking Powder
  • 1/2 teaspoon salt
  • Sliced banana, to finish (optional)

Instructions

  1. Preheat the oven to 350(f) degrees. Lightly grease an 8-inch loaf pan & set aside.
  2. To a saucepan over low heat add the butter. Continue cooking, stirring occasionally until butter begins to turn brown & has a nutty aroma. Remove from heat & let cool slightly.
  3. In a large mixing bowl mash banana with a fork. Add the brown butter & mash into the banana.
  4. Whisk in sour cream, sugar, egg & vanilla until well combined.
  5. Sift in flour, cinnamon, baking powder & salt. Stir until batter comes together.
  6. Transfer to prepared loaf pan & top with sliced banana if desired. Bake for 50 to 60 minutes, until the top bounces back to touch.
  7. Let cool completely before slicing & serving.
