Cinnamon Roll Cookies
Ingredients
- 1 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3 cups all purpose flour
- Glaze (optional)
For the dough:
- 3 tablespoons unsalted butter, melted
- 1/2 cup light brown sugar, packed
- 3 teaspoons ground cinnamon

Instructions
- In a large mixing bowl, cream together butter & sugar until fluffy. Add egg & vanilla. Beat until incorporated.
- Sift in flour, baking powder, baking soda & salt. Mix until dough comes together.
- Shape into two evenly sized rectangles, cover with plastic wrap & refrigerate until firm, about 1 hour.
- On a lightly floured surface roll out each dough to a 10 by 12-inch rectangle. Spread a thin layer of filling on each dough. Tightly roll each dough into a log & transfer to the fridge. Chill for an hour.
- When ready to bake, slice into ½-inch rounds & transfer to a lined baking sheet.
- Bake at 375(f) degrees for 12 to 15 minutes, until cooked throughout but not golden. Finish with a drizzle of glaze if desired.
For the dough:
- In a small mixing bowl stir together butter, brown sugar & cinnamon until well combined. Keep at room temperature until ready to use.
