Ingredients

    For the dough:

  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 cups all purpose flour
  • Glaze (optional)

    For the filling

  • 3 tablespoons unsalted butter, melted
  • 1/2 cup light brown sugar, packed
  • 3 teaspoons ground cinnamon

Instructions

    For the dough:

  1. In a large mixing bowl, cream together butter & sugar until fluffy. Add egg & vanilla. Beat until incorporated.
  2. Sift in flour, baking powder, baking soda & salt. Mix until dough comes together.
  3. Shape into two evenly sized rectangles, cover with plastic wrap & refrigerate until firm, about 1 hour.
  4. On a lightly floured surface roll out each dough to a 10 by 12-inch rectangle. Spread a thin layer of filling on each dough. Tightly roll each dough into a log & transfer to the fridge. Chill for an hour.
  5. When ready to bake, slice into ½-inch rounds & transfer to a lined baking sheet.
  6. Bake at 375(f) degrees for 12 to 15 minutes, until cooked throughout but not golden. Finish with a drizzle of glaze if desired.

    For the filling:

  1. In a small mixing bowl stir together butter, brown sugar & cinnamon until well combined. Keep at room temperature until ready to use.
