Cranberry Walnut Soda Bread
Ingredients
- 1 egg
- 1 ½ cups of buttermilk
- 4 ¼ cups of all purpose flour
- 2 tsp of kosher salt
- 1 tbsp of granulated sugar
- 1 tsp of baking soda
- 4 tbsp of cold unsalted butter (cubed)
- ½ cup of cranberries
- ½ cup of walnuts (roughly chopped)

Instructions
- Preheat the oven to 400°F.
- Grease a 9” cast iron pan or cake pan with softened butter and set aside.
- Whisk together egg and buttermilk and set aside.
- In a food processor, combine the flour, salt, sugar and baking soda. Add cold butter cubes and pulse approx 10 times or until you have pea sized pieces of butter. Slowly add your buttermilk mixture in stages and pulse 3 times between each stage. Pour out your dough onto a lightly floured surface. Knead until just combined and gently flatten out to a 1” thickness. Add half of your cranberries and walnuts to one half of the dough. Fold the other side over and add more cranberries and walnuts to one half. Fold dough over again, sprinkle on remaining cranberries and walnuts and flip your dough over. Form into a rough ball. Lightly dust the top with flour and score an X on top approx. ½” deep.
- Transfer to your prepared pan and bake for 40-45 minutes or until golden brown.
- Allow bread to cool for 15 minutes on a wire rack before slicing.
