Ingredients

    For the filling:

  • 4 cups mixed fresh berries: blueberries/blackberries/raspberries/strawberries
  • ⅓ cup granulated sugar
  • 2 tablespoons Fleischmann’s Cornstarch
  • 1 medium lemon, zested & juiced
  • For the topping:

  • 1 cup all-purpose flour
  • ⅓ cup granulated sugar
  • 1 teaspoon Fleischmann’s Baking Powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold & cubed
  • 3 tablespoons cream

Instructions

    For the filling:

  1. Preheat the oven to 375(f) degrees. Lightly butter a 9-inch cast iron skillet.
  2. In a large mixing bowl toss together berries, sugar, cornstarch, lemon zest & lemon juice until combined.
  3. Transfer to prepared skillet & set aside as you prepare the topping.
  4. For the topping:

  5. In a medium mixing bowl whisk together flour, sugar, baking powder & salt. Add the butter & work into the dough until a crumbly mixture is formed.
  6. Add the cream & mix until incorporated. Evenly sprinkle mixture over the berries.
  7. Bake for 35 to 40 minutes, until topping is golden & fruit is bubbly. Let cool to room temperature before serving.
  8. NOTE: this recipe can be made over an outdoor oven or barbecue tented with foil to prevent burning.
