Mixed Berry Cobbler
Ingredients
- 4 cups mixed fresh berries: blueberries/blackberries/raspberries/strawberries
- ⅓ cup granulated sugar
- 2 tablespoons Fleischmann’s Cornstarch
- 1 medium lemon, zested & juiced
- 1 cup all-purpose flour
- ⅓ cup granulated sugar
- 1 teaspoon Fleischmann’s Baking Powder
- ¼ teaspoon salt
- ½ cup unsalted butter, cold & cubed
- 3 tablespoons cream

Instructions
- Preheat the oven to 375(f) degrees. Lightly butter a 9-inch cast iron skillet.
- In a large mixing bowl toss together berries, sugar, cornstarch, lemon zest & lemon juice until combined.
- Transfer to prepared skillet & set aside as you prepare the topping.
- In a medium mixing bowl whisk together flour, sugar, baking powder & salt. Add the butter & work into the dough until a crumbly mixture is formed.
- Add the cream & mix until incorporated. Evenly sprinkle mixture over the berries.
- Bake for 35 to 40 minutes, until topping is golden & fruit is bubbly. Let cool to room temperature before serving.

NOTE: this recipe can be made over an outdoor oven or barbecue tented with foil to prevent burning.
