Salted Pistachio & Milk Chocolate Chunk Cookies
Ingredients
- 1 cup unsalted butter, softened
- 1 cup light brown sugar
- 1 cup white sugar
- 2 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon Fleischmann’s Baking Powder
- 1/2 teaspoon Fleischmann’s Baking Soda
- 1 teaspoon salt
- 200 grams milk chocolate, roughly chopped
- 3/4 cup shelled pistachios, roughly chopped
- Flaked salt, to finish

Instructions
- Line two baking sheets with parchment paper & set aside until ready to use.
- In a large mixing bowl cream together butter, brown sugar & white sugar until fluffy. Add the eggs & vanilla extract. Beat until well combined.
- Sift in flour, baking powder, baking soda & salt. Mix until dough begins to come together.
- Fold in milk chocolate & pistachios. Using a small or medium size ice cream scoop, scoop into 24 or 48 evenly sized rounds.v
- Transfer to prepared baking sheets, sprinkle with flaked salt & refrigerate until firm (minimum 2 hours).
- When ready to bake, preheat the oven to 350(f) degrees. Bake for 10 to 12 minutes, until the edges are golden & the center is still soft. Let cool completely before serving.
