Strawberry Donut Loaf
Ingredients
- 3/4 cup unsalted butter, room temperature
- 3/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 3 large eggs
- 2 1/2 cups all purpose flour
- 3 teaspoons Fleischmann’s Baking Powder
- 1 teaspoon salt
- 1 cup buttermilk
- ½ cup strawberry jam
- Pink glaze, to finish
- Sprinkles, to finish

Instructions
- Preheat the oven to 350(f) degrees. Lightly grease & line a loaf pan with parchment paper, leaving a 2-inch overhang.
- In a large mixing bowl cream together butter & sugar until fluffy, about 2 minutes.
- Add vanilla & eggs. Beat until combined.
- Sift in flour, baking powder & salt. As you mix in the dry ingredients, slowly add the buttermilk. Beat until the batter comes together.
- Transfer ⅔ of batter to the prepared loaf pan. Top with dollops of strawberry jam followed by remaining batter. Smooth the top flat to cover the jam.
- Bake for 45 to 50 minutes, until golden & the top bounces back to touch.
- Let cool to room temperature before removing from the pan. Finish with pink glaze & a generous amount of sprinkles. Slice & serve!
