Ingredients

  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 2 1/2 cups all purpose flour
  • 3 teaspoons Fleischmann’s Baking Powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • ½ cup strawberry jam
  • Pink glaze, to finish
  • Sprinkles, to finish

Instructions

  1. Preheat the oven to 350(f) degrees. Lightly grease & line a loaf pan with parchment paper, leaving a 2-inch overhang.
  2. In a large mixing bowl cream together butter & sugar until fluffy, about 2 minutes.
  3. Add vanilla & eggs. Beat until combined.
  4. Sift in flour, baking powder & salt. As you mix in the dry ingredients, slowly add the buttermilk. Beat until the batter comes together.
  5. Transfer ⅔ of batter to the prepared loaf pan. Top with dollops of strawberry jam followed by remaining batter. Smooth the top flat to cover the jam.
  6. Bake for 45 to 50 minutes, until golden & the top bounces back to touch.
  7. Let cool to room temperature before removing from the pan. Finish with pink glaze & a generous amount of sprinkles. Slice & serve!
